 XtraChêne’s Stave Fan Assembly creates a “barrel like” oak profile in tanks.


 We can advise winemakers how best to select the wood origin, dosage (new oak percentage), and toast level for their wine. Designed on a stainless steel cord, with a stainless steel spring clip, these 20 or 40 sq. ft. (1.85 m² or 3.71 m²) units are easy to install and remove.

Origins

French oak: Sessile oak (Quercus petraea), and Pedunculate oak (Quercus robur).

American oak: White oak (Quercus alba).

 

Seasoning

French oak is naturally open air-seasoned for a minimum of two years. 

American oak is naturally open air-seasoned for a minimum of three years.

 

Toast levels

The following convection toast levels are available:
French oak:
 - Light, Medium or Medium plus.
 - Toast Blends: French Clair, French Roti, or French Naturelle Series (Medium or Medium plus)

American oak: 

 - Light, Medium or Medium plus
 - Toast Blends: American Spectrum or American Bold.
